Happy Thursday! Today, I’m thanking the Lord for the blessing of being able to finally write one blog post ahead of time. I always kind of feel like I’m rushing the blog posts, and lately, I’ve been learning that I need to SLOW DOWN and do it EXCELLENTLY as unto the Lord. By the time these cheesecake bars are published, it will have been almost a week since I wrote it. YAY!!!
Ecclesiasts 9:10, ‘Whatsoever thy hand findeth to do, do it with thy might; for there is no work, nor device, nor knowledge, nor wisdom, in the grave, whither thou goest.’
Lately I’ve realized that I haven’t been doing this blogging as well as I possibly can, to give glory to my Heavenly Father. I kind of think I can ‘cruise’ along with blog posts, but why would I do that if I want to give glory and honor and praise to my Father?
One of the most challenging things has been listening to and watching other bloggers pour their hearts into their blogs, and this has been something God has used to give me an incentive to set aside more time for something that I love to do so much, something that He has given me a gift and a desire for.
Lunch was a pile of unique nachos with chips, sauteed veggies, and parmesan cheese.
“But it shall not be so among you: but whosoever will be great among you, let him be your minister; And whosoever will be chief among you, let him be your servant: Even as the Son of man came not to be ministered unto, but to minister, and to give his life a ransom for many.” Matthew 20:26-28
Dinner was the last of the COLORADO peaches. (Man, they were just SO AMAZEBALLS) I’m just soaking in and so grateful for the way the Lord showers blessings like:
Peaches and Summer Fruit
and so much more . . .
and most of all:
His mercy and love.
“For he saith to Moses, I will have mercy on whom I will have mercy, and I will have compassion on whom I will have compassion. So then it is not of him that willeth, nor of him that runneth, but of God that sheweth mercy.” Romans 9:15-16

With that I want to present to you the ALMOND butter find of the year!
1) This year I finally learned that social media is a TOOL. It can be used for good or evil. If you use it for good you can be used to bless so many people. And you can also discover some of your favorite small businesses and American companies.
I found Georgia Grinder’s on Instagram, and I was fascinated by their company. I decided to reach out and ask if they wanted me to sample and share some of their deliciousness on Instagram and the blog. You might have seen it in this blog post and on my Instagram.
Well this stuff is SERIOUSLY so delicious. It’s not exactly creamy or crunchy.
It’s in between.
On a taste scale, I would probably put it at 10/10, and I really love the creamy/crunchy blend in the almond butter. The Maple Caramel was one of the best butters I’ve ever had.
And it goes well on almost anything….
Almond Butter & Jelly Sandwiches
My Family’s thoughts on it were: They thought it was amazing. I hadn’t heard my one sister love a nut butter so much as this one.
You all know how much I love yogurt bowlzz, and a little dollop of this adds so much yummy flavor to the bowl.
Last but not least it also added a different nutty flavor to these ‘Strawberry Cheesecake Almond Butter Bars’ that I made last week.
You know what I’ve learned?
Baking takes a lot of faith. God uses it to test my faith, to test my faith in His goodness and mercy. He’s also taught me that sometimes I get too cocky in the kitchen and think that I’ll make a ‘perfect recipe.’ That’s when He humbles me and shows me that I need to not trust in my ability and trust in His gentle, patient teaching with me, however the recipe turns out.
I’m so thankful that these cheesecake bars turned out, and they actually came out of the pan. :o) Who else gets so excited about those baking wins? 🙂
No Bake Strawberry Cheesecake Almond Butter Bars

A creamy strawberry flavored bar with a streusel topping and graham cracker crust.
- 4 Graham Cracker Sheets
- 1/3 cup melted coconut oil
- 6 oz cream cheese softened
- 1/4 c. yogurt
- 2 tbsp. coconut sugar
- 1 tsp vanilla
- 4 tbsp. strawberry jam
- 1/4 c. Georgia Grinder's Almond Butter
- 2 tbsp. brown sugar
- 2 tbsp. coconut oil
- 1/4 c. flour
- 1/4 c. oats
- 1 tsp. cinnamon
- Crush graham cracker sheets till they are almost powdery. Mix in melted coconut oil. Press it into an 8x8 pan. Set aside. Soften cream cheese and whip it with the yogurt, coconut sugar, and vanilla. Pour over crust mixture. Spread gently. Dollop strawberry jam evenly over the cream cheese mixture. Set aside. In another bowl, mix oats, flour, cinnamon, almond butter, cinnamon, and coconut oil till it forms tiny clumps. Sprinkle over the top. Put in the freezer for 1 hour to set. Cut into bars, and enjoy the Lord's blessings and goodness in food.
These bars are surprisingly sweet; I wasn’t averse to using more sugar in them, but I decided to try it with less, but they were plenty sweet for my family. 🙂 I didn’t skimp on the fat, and I think not skimping on fat really aids to helping the flavor of desserts. (Not an expert here…)
