Can you say, ‘BEST POST LONG RUN FUEL EVER?’ I’m not the best at fueling up after a long run, because, honestly, I’m not really hungry afterwards. But, today, I made the intentional decision to make a big, carby, protein, and fat + sugar filled lunch to follow my 8.63 mile run with the husky.
Let’s make a disclaimer here… I’m running, but for a long time, I didn’t run very much or very often because my body was still healing from an eating disorder. And I must be 100% transparent here; my body is still not 100%. But, I’ve come a long way mentally, emotionally, and physically when it comes to running/calories and refueling. All the glory be to God for the huge transformation. I wouldn’t be where I am but for His work in me.
Well, I’ve really been digging the fast, single serve French toast recipes lately, and this one is no exception… You might remember that i raved about Just Jan’s Spreads in this post:
Fudgy Figgy Chocolate French Toast
and then I tried her RASPBERRY JAM.
Y’all I don’t know if I can ever go back to any other raspberry jam besides my grandpa’s and Jan’s. I opened the jar and took a HUGE whiff.
It smelled like crushed raspberries (fresh off the bush.)
‘This is my Father’s World… And to my listening ears… All nature sings and round me rings the music of the spheres.’
Those raspberries even sing His glory. And I was so privileged to make them into a French toast recipe for you that hit the spot.
Who wants to lick that brown sugar off the plate with me? I might have … Ok, I did lick the plate after I was done.
This recipe is super simple. It does require the extra step of caramelising the bananas, but it is so worth it, because it forms the best syrup over the French Toast for your enjoyment!
Caramelised Raspberry Chocolate Banana French Toast
A stuffed French Toast 'breakfast' sandwich with the sweet flavor of summer(y) raspberries, the smooth taste of dark chocolate, topped with caramelised sugary bananas.
- 2 slices Canyon Gluten Free Bread
- 1 egg, whisked
- 1/2 tbsp. Dark Chocolate Dreams Peanut Butter
- 1 tbsp. Just Jan's Raspberry Jam
- Caramelised Bananas:
- 1/2 banana
- 2-4 tbsp. brown sugar
- More Dark Chocolate Dreams Peanut Butter
- More Just Jan's Raspberry Jam
- Warm up your skillet (about 1-2 minutes). If it's non-stick you don't have to use butter, but you can. Warm it up on a 'medium heat.' And make your French Toast sandwich.
- Spread the Chocolate peanut butter on one slice. Spread the jam on the other slice. Put them together and dip them in your whisked egg.
- Put the sandwich on the skillet and cook till it's golden brown on both sides (about 20-30 seconds on each side.)
- Top the sandwich with your caramelised bananas. Add more peanut butter, jam, and you can even do yogurt or whipped cream.
While on the run, I was thinking about something.
How often do we stop to just be quiet and listen? How often do I stop to just listen to what the Lord is teaching me through His Word?
Sometimes life just goes SO fast, and we feel really stressed.
Has His peace come over you? Do you know the peace of Christ that passes all understanding?
I wanted to leave you with this precious exhortation from my Savior Jesus Christ, my Lord and my God, in John 15 for His disciples.
‘Herein is my Father glorified, that ye bear much fruit; so shall ye be my disciples.
As the Father hath loved me, so have I loved you: continue ye in my love.
If ye keep my commandments, ye shall abide in my love; even as I have kept my Father’s commandments, and abide in his love.
These things have I spoken unto you, that my joy might remain in you, and that your joy might be full.
This is my commandment, That ye love one another, as I have loved you.
Greater love hath no man than this, that a man lay down his life for his friends.
Ye are my friends, if ye do whatsoever I command you.
Henceforth I call you not servants; for the servant knoweth not what his lord doeth: but I have called you friends; for all things that I have heard of my Father I have made known unto you.
Ye have not chosen me, but I have chosen you, and ordained you, that ye should go and bring forth fruit, and that your fruit should remain: that whatsoever ye shall ask of the Father in my name, he may give it you.’ (John 15:8-16)
Take time to read His words. How do they apply to you? Have you ever thought about it before? Is your heart quiet and listening?
And maybe while you’re reading you can make some French toast and just stop and listen.
It’s okay to unplug on the run and just listen.
It’s okay to just sit by the window and look out and listen and think.
But don’t let your mind be filled with the lies of the devil. Read God’s truth, and see what He has to say to your heart.
