On a lighter note, let’s talk about COOKIES. Specifically these are cookies with both peanut butter AND jelly. Have you ever bitten into a cookie that was soft, slightly chewy, buttery, sweet and studded with chocolate? I guess this would be an accurate description for these little frosted and unfrosted gluten free bites of deliciousness. These were kind of a ‘spur of the moment’ brain child, but the conclusion from the family (the expert taste testers) was that they loved them, so I thought that made it legitimate to share them with you.
Why cookies? Well, I like cookies as evidenced by these ones.
Well, the holiday season is a season of cookies, but we eat cookies all year around here. Cookies are a great way to conquer those fear foods, fulfill a sweet tooth craving, or to accompany a glass of milk.
These cookies include some of the products that I’ve only discovered in the last year that I love and continue to use time and time again.
Bliss Nut Butters makes an appearance along with Try About Time protein powder. I even tried out a gluten free flour from Safeway called Arrowhead Mills. I am not expert on gluten free flours, but this one definitely worked really well.
These cookies also combine my two favorite childhood flavors:
Peanut Butter and Jelly….
Who recalls those days of playing outside in the dirt, making mud pies, playing house and coming inside for a peanut butter and jelly sandwich that has a 1/2 inch of peanut butter and 1/2 inch of jelly. It reminds me and makes me so grateful that God so graciously gave my parents a really balanced way of approaching food. We always had our carbs, salads, and desserts, and my parents were never obsessed with food.
Oh yes, and if you don’t have time to make your own jelly, you should try the delicious Strawberry jelly from Costco or you can go for one of these quick ‘chia jams’ from Rachel and Bethany.
That truly is one of the sweetest memories of my childhood. 🙂
This recipe includes a LOT of ingredients, but I promise that it’s worth it mixing it all up, because I really think and hope that you will love the finished product, if the Lord wills. <3
White Chocolate Peanut Butter and Jelly Cookies
|Cook:||Yield: 20 cookies||Total:|
A soft cookie with subtle flavors of peanut butter, chunks of white chocolate, and a slight vanilla edge.
- 1.5 cups Arrowhead Mills Gluten Free All Purpose Flour
- 1 scoop vanilla protein powder (Try About Time)
- 1/2 c. coconut oil (melted)
- 1/2 c. coconut sugar or brown sugar
- 2 tbsp. strawberry jelly
- 1 egg
- 2 tbsp. Bliss Cinnamon Peanut Butter
- 1 tsp. baking soda
- 1 tsp. almond extract
- 1/2 c. white chocolate chips
- 1/4 c. yogurt
- Preheat the oven to 350 degrees. Line a baking pan with that delightful invention called parchment paper. Whisk together coconut oil, coconut sugar, strawberry jelly, peanut butter, yogurt, egg, and almond extract until well combined and creamy. Mix the flour, baking soda, and protein powder in a separate bowl. Pour dry ingredients into wet ingredients. Add white chocolate chips. Stir until it forms a thick cookie dough. Roll into cookie dough balls. It should make about 20 cookies. Enjoy the delicious flavors, the mercy of God's provision, and the delight of a little sweet treat.
