Did someone say a buttery cookie? This buttery tasting (it doesn’t actually have butter, but it tastes BUTTERY) cookie was a combination of a desire to use my iron skillet to make something, use the bag of Lemon Berry Chia Clusters Whole Me sent me, remind you that I actually extended the giveaway for Whole Me Clusters, AND create something that everybody in our house could eat. I didn’t want to skimp on fat or be afraid of sugar with this recipe, so I just used other fats like coconut oil (so our dairy free household members could eat it) and almond flour (so our grain free household members could dig into it too.)
But today is also the day that we celebrate the life of little Charlie.
Charlie went to be with Jesus. He went to the best place he could possibly be in right now; I can’t be too sad for Charlie. I’m not sad for Charlie; I’m a bit sad for us because we had to say goodbye for a short time.
But Charlie is IN GLORY.
He has that new body promised in Philippians 3:20-21, ‘For our conversation is in heaven; from whence also we look for the Saviour, the Lord Jesus Christ: Who shall change our vile body, that it may be fashioned like unto his glorious body, according to the working whereby he is able even to subdue all things unto himself.’

Without Jesus we would have no hope, but in Jesus Christ, we can be washed, cleansed, and glorified… Is that not so glorious on this day of remembering our precious beloved little brother in the Lord?
Charlie, you made me smile and so many others smile, and that’s why I’m sharing this cookie recipe on the day of your celebration. Because you reminded me to smile and be reminded of the exceeding rich grace of God to us that we don’t deserve but that’s what makes it grace.
God showed His grace to us through Jesus Christ SAVING you, HEALING you with His own precious blood. And I want to give glory to God with this recipe for your life Charlie. <3
Well… this recipe is actually SUPER simple. I wanted to invite all my friends to the blog and tell you that it is:

The idea was to make a ‘lemon’ based cookie, because that flavor isn’t quite as popular, but I think we can all agree that a ‘Lemon Muffin’ is always light and refreshing.
I was going out on a limb to say that a lemon cookie could be really good, but I think it pressed me to PRAY more and depend on God more and more and ask that He might bless the recipe if it was His will.
And here it goes….. We mix up the dough. We put in ingredients, that I thought would be proportionate to a regular cookie, oil the pan, and put it in the oven.
Then we set the timer and wait….
First though: We have to take a picture of the dough pressed into the pan. This is the kind of dough that you could eat most of it before putting it into the oven, so you have to get it into the oven quickly or you will end up eating it.
The cookie comes out of the oven, and I hold my breath. Well, it doesn’t look like anything ‘spectacular’, but I just make a little glaze and glaze it after it cools; take some pictures, and then leave it to sit for after dinner.
I also used an ingredient that is a little … odd, but it worked!
It was one of my favorite crunchy seed butters; Bliss Sunflower Seed Butter. This was part of a fun nut ‘buttery’ cookie series I’ve been doing via Instagram and my blog for them; Danielle, the owner sent me 6 jars, and I plan on sharing 1 of them with you all if you come to the end of this post!
Then we have it at dinner time, and I am so humbled to see that my family loves it. It’s:

Without further delay, I present to you this delicious, lemony, buttery, soft skillet cookie.
Lemon Buttery Cookie (Vegan, GF and DF)

A SOFT lemon flavored cookie with a crispy edge and tropical lemon flavor...
- 2 cups almond flour
- 1 tsp. baking powder
- 4 LARGE clusters Whole Me Lemon Berry Flavor
- 1/4 tsp. salt
- 1/2 cup brown sugar
- 1/4 c. Bliss Nut Butters (Sunflower Butter) (OR: Use another kind of nut/seed butter as Bliss Nut Butters contain honey)
- 1/4 c. lemon juice
- 1/2 c. melted coconut oil
- 1 scoop Further Food Collagen (OMIT if you want this to be vegan)
- 1 Chia Egg (1 tbsp. of ground chia seed with 3 tbsp. water. Let sit for 1 minute)
- 1 tsp vanilla
- 1/3 c. powdered sugar
- 1 tsp. lemon juice
- Preheat oven to 350 degrees Farenheit. Whisk together melted coconut oil, brown sugar, and sun butter.... Let sit for a few minutes while you prepare the chia egg. Whisk in the lemon juice and chia egg and vanilla. Sprinkle in the almond flour, baking powder, salt, and Whole Me Clusters.
- Pour into prepared, oiled cast iron skillet. Press into the edges. Bake at 350 for 20-25 minutes, depending on how doughy or cirspy you like your cookies! Let cool completely before drizzling the glaze over it and cutting into wedges.

Lunch was unpictured but it did include one of Bethany and Rachel’s New PB Chai scones + half a plate of delicious loaded salad.
Snack: I had this interesting Watermelon Sprouted Seed Bar; it was mint chocolate flavored and actually really good!
Dinner: Spaghetti noodles and MEATBALLS
Dessert: It was DEFINITELY more scone and icecream and peanut butter.
Snack: A mug of Kashi Vanilla Cereal topped with raisins, milk, and a big scoop of peanut butter.
Another Snack: A handful of nuts and chocolate chips… (All in all it was a good day full of yummy, happy stomach food)
