Coming from the girl who likes to write ‘LONG’ boring blog posts, I was in the mood to just do something light and fun and thankful tonight. Of course, I hope that all the blog posts are thankful, but recently I’ve been realizing how recovery is going so well. I’m really grateful.
It just doesn’t almost seem real, but I’m seeing God’s kindness in it; when I eat food and I don’t really think about the calories that much. I’m seeing God’s kindness even in what I’ve been eating lately, from sweet potatoes to scones to ice cream to pumpkin peanut butter, so I wanted to share the foods I’ve been loving and thankful for lately.
And there are so many, but I will limit myself. 🙂 Maybe you can get some new ideas for some fall baking and such?
#1) Eating this pumpkin spice cookie butter from Trader Joes. I’m not an Amazon affiliate, but here is the Amazon link for it. It is seriously SUCH a treat. I was kind of like a kid in a candy store when we were in California on Monday; TRADER JOES COOKIE BUTTER for the win!
#2) Georgie posted these scones yesterday for an APPLE collaboration with some of my favorite recipe bloggers! – Well I don’t wait very long, but I made them yesterday. And they were buttery, doughy, delicious, and soaked with the flavors of fall.
#3) Eating Chinese food. ‘Nuff said. – I’m so thankful that the Lord provides convenience food when you are just dragging at the end of the week.
#4) Eating Sweet Potatoes with toppings. 6 minutes in the microwave is all it takes to cook one of these babies up; and I’m definitely a sweet toppings gal.
The Athletic Avocado girls have some amazing sweet potato creations on their blog too.
#5) Salmon and roasted veggies.- Being a landlocked Colorado girl, salmon is such a treat!
