Last week I asked the question, ‘Is Recovery Entirely Possible?’ I’ve realized that I’m far more recovered than I ever thought I would be; I was reminded of that today after I completed a 8(ish) mile run. I didn’t want to restrict; I wanted to get in as much food as possible. These were some of the thoughts that went through my head as I ate a creamy smoothie (the recipe is coming below!) this morning after my run.
As a result of those thoughts, I wanted to cover what a day looks like (for me) in terms of re-fueling the body, eating because I can, not because I ‘have to’ but because I can and I love it. Remember that this looks different for everybody!
These are actually some of my favorite posts, and that’s why I love going to Meghan’s ‘Week In Review’ posts to see what everybody’s been up to; I wanted to share a ‘mini version’ of a day in review for the party.
Fueling the body is truly a gift, and yesterday, I started the morning with some time in God’s Word and two of my new favorite snacks.
7:30 AM – A Wella Bar (Ellie recommended these to me, so I thought I would give them a try) with an apple for First Breakfast.
9:00 AM – Take dogs out for walks. Run around in the woods with my puppy.
2nd Breakfast before the run – Plus this caption…. There is nothing like the peace of Christ. Also, if you have not tried the caramel almond butter from Georgia Grinders you must try it. It is super creamy, a bit crunchy even, and finger licking delicious. I like to dip my finger into the creamy scrumptiousness and enjoy some before bed.
9:30 AM – Go for a run with the bigger dog Apollo. We go into town and wind around the streets. We live in such a small town, that some of the main city streets are still dirt.
11:00 AM – Apollo and I return home, and we both refill on water. We drink tons, and then I have to go to the store and get some things for dinner.
12:30 PM – I put together all the makings for my EPIC creamy smoothie that I’m planning on making for today’s blog post.
The ingredients are:
A Mamma Chia Beverage
1:00 PM – Eat slowly. Savor the flavors of the creamy, smoothie I made with the added crunch of the clusters and chocolate.
1:00 PM – 3:30 PM – Clean. Clean. Clean. I love Saturdays, cause we get to clean the house and basically clean up after all the crazy fun projects during the week. And it’s pretty rewarding to walk around the house and just feel nice inside (cause the house is clean.) :o)
3:30 PM – Bring one of our huskies, a female breeding husky ‘Balta’ inside, and try to calm her down so she’ll sit with me while I do my health history for Ellie.
4:00 PM – I do an interview for the podcast with one of the bloggers I consider one of my mentors in recovery and in faith, Sarah!
5:00 PM – I get the news that a dear precious sister in Christ Jesus has passed on from this world to be with Jesus. I feel mixed feelings; death is sad but she’s no longer suffering. She has truly entered into the joy of the Lord. She’s with Jesus, the Savior and Lord of our souls!
‘For since by man came death, by man came also the resurrection of the dead. For as in Adam all die, even so in Christ shall all be made alive. But every man in his own order: Christ the firstfruits; afterward they that are Christ’s at his coming. Then cometh the end, when he shall have delivered up the kingdom to God, even the Father; when he shall have put down all rule and all authority and power. For he must reign, till he hath put all enemies under his feet. The last enemy that shall be destroyed is death.’ (1 Corinthians 15:21-26)
Jesus has destroyed the last enemy of death, and I’m so thankful Mrs. V. knew that. I’m going to miss you; I’m so excited to see you again soon.
5:00 – 6:00 PM – Start working on this post. Then I get distracted and make these chocolate chip cookies. They were amazing, by the way. I also eat one of the bars I made from Bethany and Rachel’s recipe (I covered them with chocolate frosting. :D) You have to keep those calories high so your body isn’t suffering from lack of nutrition. That includes some cookies.
(By this time: I’m going to be transparent to the point of telling you that I do count calories on days I run (sometimes to make sure I get enough.) I’ve gotten to about 1500 calories by now-that’s an *approximation* (not exact).
6:00 PM – I remember that I need to transcribe an interview clip for Monday’s newscast, so I do that, and then I come join my family for dinner.
6:15 PM – 7:30 PM – We sit and eat dinner, listen to some of our favorite folks songs from people like Paul Overstreet and Marty Robbins. (Yep, I love many of their songs. I have kind of an old fashioned cowgirl’s heart.) I make sure to eat more food, because it’s becoming more important to me to keep my energy high instead of dragging through the end of a day with no energy because of calorie restriction.
7:30 PM – 7:48 PM (which is now) – I write this post, and then I share this EPIC High Calorie Creamy Smoothie Recipe.
Thanks to Whole Me I was able to bump up the calories of the smoothie with some of the crunchiest, delightfully sweet cluster(y) granola that you will ever taste. I tried to make them as high as I possibly could without the addition of protein powder (because I don’t have any right now.)

I decided to do a:
Almond Raspberry Chocolate High Calorie Smoothie with all the ingredients I had.
It all started with this beverage that I found at Safeway. It was on sale. Have you tried Mamma Chia products?
Then I just started rummaging through the freezer, and here is the creamy, chocolatey combination that came out of it. 🙂
The Ultimate Creamy Almond Chocolate Smoothie
|Prep:||Yield: 1 person (Don't be afraid of the calories)||Total:|
A creamy chocolate smoothie with the crunch of almond, pop of dark chocolate, and some secret superfoods.
- 1 c. Frozen Spinach
- 1 cucumber
- 1 cup strawberries (frozen or not)
- 1/3 c. Mamma Chia Raspberry Beverage (or you could use milk)
- 1/2 c. Stonyfield Whole Milk Yogurt
- 2 tbsp. Further Food Collagen (Use my Non Affiliate Code 'Beauty10' for a discount)
- 2 tbsp. cocoa powder
- 1 tbsp. coconut sugar
- 1 tbsp. Peanut Butter or Almond Butter
- 1/3 cup Whole Me Almond Coconut Clusters
- 4 squares Divine Chocolate
- 1 tbsp. Almond Butter (your favorite kind)
- Blend all smoothie ingredients in the blender until really creamy. Pour into a HUGE bowl because it's going to be huge. Top with your Whole Me Clusters, almond butter, and dark chocolate.
8:00 PM – 8:30 – Finish this post because tomorrow’s Sunday and that means worship and rest!!!
Go outside and pet my creamy white husky puppy; His name is Ochkee, and he makes me smile so much.
8:30 PM till bedtime –
On Saturday nights we usually unplug, spend time listening to a sermon together, do showers, and usually I eat a BIG bowl of cereal. Hopefully, I reached my nutrition goal for the day, so my body isn’t totally depleted of energy for Sunday. NO MORE calorie restriction; only fueling my body for God’s glory!
I also try to get to bed between 10 and 11 PM; that way I’m not a grump on Sunday morning.
